Oatmeal Pancakes

My friend Grant Miller's recipe. Lightweight pancakes that aren't just white flour. Remember to soak the oats the night before!

Soak overnight

  • 2 cups whole oats
  • 2 cups of buttermilk (or whole milk + lemon juice)

Dry ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 tbsp (1/4 cup) sugar

Combine everything and add

  • 1/2 stick of butter (melted)
  • 2 eggs
