Baked Oatmeal

Based on a recipe served at Rachel's Bread (now Anna's Bread), in Goshen, Indiana.

Combine and let sit until absorbed

  • 1.5 cup bulgur
  • 3 cup boiling water

Dry ingredients

  • 2.5 cup oats (mostly whole)
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp stevia extract powder

Wet ingredients

  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup butter
  • 2 tsp vanilla

Combine everything and add

  • 1.5 cup dried cherries
  • 1.25 cup whole milk
  • 1/2 cup chopped walnuts or 3/4 cup chopped pecans

Bake at 350 for 48 minutes, or until knife comes out relatively clean
